Raspberry coffee cake


Ok. I'm sick of not being able to have sweet rolls and breakfast breads{ I'm in TOPS,trying to lose weight}...so I found this recipe. YUM! It's wonderful.! It calls for 6 servings at about 4 pts. each. I cut it into 12 at 2 each. It's still a nice size slice and satisfies my craving for rolls. Now if I can just keep Brent out of it!


The cream cheese part is wonderful!



Strawberry freezer jam

A few weeks ago I went strawberry picking. I usually go every year...of course it was more fun when the kids were small and wanted to go with. They loved to ride on the wagon out to the patch...and to see the animals on the farm. We eat a couple pails and I usually make a few desserts. I always make a few batches of this freezer jam too. It's great on toast but even better on ice cream!

Great burgers


Brent brought home a burger recipe he wanted me to make for him. He thought putting cheese INSIDE the burger sounded great. He loves cheeseburgers and never seems to get enough of them. He even orders them when we go out to eat,too. I have no idea how he got a hold of this recipe but it was a winner. The combo of cheeses inside was delish!

Carrot bread

I haven't done much baking lately as I recently joined Tops {lost 8 lb. so far!} But I did make some low fat carrot bread. I've used this recipe many times, but never with Carrot cake mix and I really like it. It's very simple:

Carrot Bread
1 box carrot cake mix
2 egg whites
1 can pumpkin

I usually use a chocolate cake mix..but I think this is even better. It's been hard to find canned pumpkin around here. Someone said that's because the pumpkin crops weren't good last year. I don't know if that's true or not but when my friend told me she saw some at a local grocery store again, I went and got a bunch. I often make this in cupcakes which end up being 1 WW...so they are very easy on the diet..a nice treat!

Rhubarb Cake

Ok, this cake was serious GOOD. At first I really wondered about it, because when I took it out of the oven and cut into it {I can never wait } it seemed soupy. But sure enough, when I checked it later that day, it was perfect. And the taste was incredible!!!! It was so moist and delicious we all had another piece right away. It was all gone the next day. How embarrassing...but true!

I got this recipe and the rhubarb from a friend of mine....I think I need to ask her for more of her recipes!!!!


OOPS!!!!! I left off the 1/2 c. of brown sugar that you sprinkle on top before you bake it. Don't forget as it's the best part!!!!!!

Rhubarb Bars

I finished my first recipe card for my new recipe book I'm making. Rhubarb Bars. I tried them at work and had to get the recipe...the shortbread crust is wonderful! I used to have a huge rhubarb plant but somehow over the years it just gets smaller and smaller. One of my friends and I went to get rhubarb from a co-worker's patch but she didn't have much this year either. I did manage to get enough for this recipe, though. I love rhubarb..and it's awesome in this recipe! If I had more rhubarb I would definitely be making these again soon!




Enchiladas



This is a recipe I got off the net. I had a can of enchilada sauce to use up so I Googled some recipes. This one came up...it sounded easy...and that's always good! We all liked it so its become a regular in our house.




7 up biscuits



I saw this easy recipe for biscuits and gave it a try. They went together quickly and had a nice sweet taste. They were perfect with our Sunday ham dinner. I liked them the next day for breakfest with jam,too.



Sugar Cookie Bars



If you love sugar cookies these are the bars for you. I saw them over on the Village Cook. Everyone is always asking me to make sugar cookies, but I really don't enjoy all the time it takes rolling out and frosting them. When the kids were little we made them often, as they loved to help...but now that they are gone, it just isn't as much fun. I was hoping this might be a solution. They were so simple and I loved the thick cookie part with the butter cream frosting. Yum. I LOVE frosting and these had plenty on them.


I think I will make my roll out sugar cookies only on holidays..... and I'll make these in between!


Dip

Good Morning!

This dip is great for a crowd. It makes A LOT! One of my friends at work makes this all the time for potlucks and it's always a hit. It really has a lot of flavor!

The storms have stopped and it's a sunny day! Looks like I'll be outside today...but I did get a lot of stamping done yesterday.

Blondies


So what IS a Blondie? I thought I knew. I'd made them before or so I thought. I used to make the chocolate chip cookie recipe off the bag and bake them in a pan and call them Blondies. I kept seeing Blondies on all the food blogs I visit lately. I just didn't get why everyone was raving about them. I mean they were good when I had made them, but not extraordinary or anything . So I thought I'd give the recipe a try and see what all the fuss was about. Well let me tell you, these are not just any ordinary Blondie....these are INCREDIBLE!!!!! .....believe me....these are not the same as mine AT ALL.


I get it now!


Blondies are just like a brownie...chewy and moist... except the brown sugar and melted butter give them a toffee like flavor. You can add whatever you like to them..I added pecans and chocolate chips. These are now my new favorite bar. Honestly, they are AWESOME!!!!!

Zucchini Bread

I got this recipe from a friend of mine..she makes it all the time and it's DELISH! I like that it freezes really well, too. It's really moist and I love all the nuts!




Easy Fettuccini

This was SO easy! And tasty! What a great side dish...or main dish..... you could just add some chicken. Brent asked if I could make this once a week..so I knew this was a keeper!

I had some leftover and it was even better reheated. I used WW cream cheese, and next time I think I won't add as much butter. Gotta cut a few calories where I can!


Fudge



I used to work at a local tourist shop that sold fudge.....made fresh weekly. I loved that fudge. So many flavors. So good. Mmmmm. I used to buy some everyday as we could get it for half price. One of my favorites was peanut butter fudge. I saw this recipe in a cookbook one of my friends gave me for my Birthday and it reminded me of my fudge days. So guess what? I made it. I think it's even better! Here's a picture while it was still warm:

Peanut butter bars



These were some great tasting bars!!!! One of my friends at work made these and we all gobbled them up. If you like peanut butter...these are a must to make! Warning: they are very RICH!!!!
I don't even remember how many I had!







Good Spuds


Oh my. These potatoes are killer! We loved them. I used fat free sour cream and just a bit of the butter and cheese called for and they were just delicious. I also used only half of the Hidden Valley dry ranch. I don't know if they could get any better..but I suppose with more butter and cheese they are bound too! I may try that when I serve them for company...but for now I will make them low fat. And.... I will be making them often!
